They represent the smallest species in the genus Allium, which also includes onions, garlic, and leeks, and are the only Allium species native to both the Old and New Worlds. Chives produce slender, hollow, cylindrical leaves and round, pale purple to lilac flower heads atop leafless stalks, both of which are edible and valued for their mild onion flavour. In the wild, chives grow in a range of habitats including rocky slopes, mountain meadows, riverbanks, and forest edges, typically preferring cool, moist conditions with well-drained soils. They spread both by seed and by vegetative division of their bulb clumps, forming dense patches. As one of the classic fines herbes of French cuisine, chives have been cultivated for culinary use for over 5,000 years and are now grown worldwide in gardens and as a commercial crop.
