Common Salsify

<em>Tragopogon porrifolius</em>, commonly known as common salsify, vegetable oyster, or purple salsify, is a biennial or perennial herbaceous plant in the family Asteraceae. Native to Mediterranean Europe and western Asia, it has been widely cultivated as a root vegetable since antiquity and has naturalized extensively across Europe, the Americas, Australia, and parts of Asia. The plant typically grows on roadsides, waste ground, dry grasslands, and disturbed soils in sunny locations. In its first year it produces a rosette of grass-like, grey-green leaves; in the second year it produces tall, branched stems bearing showy purple flower heads that resemble large dandelions, typically 5–7 centimeters in diameter. The edible taproot has a pale, somewhat oyster-like flavor when cooked, and the young shoots and flower buds are also edible. Common salsify is not currently evaluated on the IUCN Red List. Pollination is primarily by bees and other insects visiting the flowers, which open only in morning sunlight. Seeds are dispersed by wind via a feathery pappus. The species favors well-drained, moderately fertile soils and can be found in both rural and urban habitats.
