Fermentation is billions of years old — it predates the oxygenation of Earth's atmosphere when aerobic respiration was impossible. Yeast ferments glucose to ethanol and CO₂ (used in bread and alcohol production); lactic acid bacteria produce yogurt, cheese, and sauerkraut. In muscles under intense exercise, human cells temporarily ferment glucose to lactate when oxygen delivery cannot meet demand. Industrial fermentation produces biofuels, antibiotics, and enzymes.
